I am going to be very frank with you all; I am getting pretty sick of making every meal with chicken breast to please my youngest. Even kosher hot dogs seem like a gourmet step up when she is not home for dinner and I can finally ditch the bird. And lately, I have been craving meatloaf so bad, which I have not made in forever! Of course I decided to compromise again. Got some ground chicken breast and to my biggest surprise it turned out super yummy. Now, I would suggest you still use ground pork, or equal amounts of ground pork and lean beef. Both would make a delicious meatloaf! Let’s get started and get our hands dirty!

Ingredients:

  • 1 lb of ground meat of your choice, my recommendation is using pork

  • 2-3 gloves of garlic

  • 1/2 cup of plain dried bread crumbs

  • 1/2 cup of sour cream

  • 1 tbsp of paprika powder, of course I used my Hungarian sweet Paprika

  • 1 egg

  • salt & pepper (about a tsp of salt)

  • olive oil

  • 4 hard boiled eggs, peeled

First, in a large bowl, mix together meat, paprika, egg, sour cream, crushed garlic, salt and pepper. I learned to add sour cream from my sweet mother-in-law, and it really helps the meat stay moist.

Add as much bread crumbs as needed to achieve a texture that is easy to work with, not too dry but not soft either.

Grease a glass baking pan with some olive oil and scoop meat into the middle. Make a dent in the middle and place your hard boiled eggs in dent tightly packed.

Grease your hands with olive oil and cover eggs with meat forming into a bread shape. Sprinkle top with olive oil, cover with aluminium foil and bake on 375 F for a half an hour. Remove foil and bake for another half an hour. Remember, pork and beef will come out darker, my chicken looks much lighter in color.

Serve it with garlic mashed potatoes, or a nice salad, or simply make sandwiches with the sliced meatloaf. Enjoy!
