RASPBERRY CHEESECAKE BROWNIE SQUARES
Now that my youngest baby is out of school and will very soon be reunited with my oldest daughter in Europe, I thought we would post a series of recipes I will prepare together with my beautiful daughters. Boy, this sure makes picture taking a whole lot easier but of course not cleaning up my kitchen after the baking. I probably should have picked a cold dish to make considering it is in the high 90's and baking is not exactly helping the situation in the house. But what can you do when you just crave something chocolaty? You turn your oven on and endure the heat for this sinfully decadent dessert. Worth every drop of sweat!
INGREDIENTS:
Brownie mix:
- 1 cup of butter
- 6 ounces of 60% dark chocolate
- 3.5 ounces of white chocolate
- 1 & 1/2 cups of sugar
- 3/4 cup of flour
- a pinch of salt
- 4 eggs
- 2 teaspoons of vanilla extract
Cheesecake mix:
- 8 ounces of cream cheese
- 1/3 cup of sugar
- 1 teaspoon of vanilla extract
- 1 egg
- about 6 ounces of fresh raspberries
Preheat oven to 350 F. Grease and flour a brownie baking pan, used my new Pampered Chef square baking dish. In a heat proof bowl over a pan of gently boiling water, melt butter, dark chocolate, and white chocolate. Mix it well, set aside to cool. Combine sugar, flour, salt and fold it into the chocolate mixture. Add vanilla extract and beaten eggs, mix well until you get a nice, shiny chocolate mixture. Pour it into your prepared baking dish or divide it up equally between baking squares.
Next, with an electric mixer, beat sugar and cream cheese until well blended and fluffy. Add vanilla and egg, mix again. Pour cream cheese mixture over brownie, spread it all over with a knife. Use a knife or fork to create a marble effect.
Place 3-4 pieces of raspberries into each square, or evenly distribute 6 ounces of raspberries if using a large baking pan, push it down with a fork a little to immerse in mixture. Bake it for 35-45 minutes, but make sure you check before removing it from oven to see if brownie is set.
Middle should move slightly when shaken. Do not overcook to prevent brownies from becoming too dry. Cool in pan, remove each square (or cut it into squares if using brownie pan) to serve as is or add some whipped cream or vanilla ice cream. Yammmm!
