The dreaded question: "What's for dinner Mom?" Well, to help you out, here is an easy breezy dinner idea, super tasty yet simple to prepare, which will hopefully please your entire family. 

Ingredients:

  • 2 chicken breast halves
  • 2 tbsp of extra virgin olive oil
  • 4 tbsp of butter
  • 1/2 cup of flour
  • salt & pepper to taste
  • 2-3 cloves of garlic, crushed 
  • 2 tbsp of freshly chopped Italian parsley 
  • 1 cup of white wine
  • 2 tbsp of freshly squeezed lemon juice 
  • 1-2 tbsp of capers, drained

I don't like large pieces of meat, so I usually cut my chicken breasts in half. Also, this time they were quite thick so I cut them in half across as well. So, after preparing your chicken pieces according to your taste, place them between plastic foil and gently pound it out a little with a meat tenderizer. Salt and pepper each piece, then generously coat both sides with flour.

In a non-stick saute pan, heat olive oil and butter on medium-high heat, and cook chicken until nicely browned on both sides, about 3-4 minutes per side. Remove chicken pieces from pan to a plate and keep warm. Add crushed garlic, white wine and lemon juice to pan. Scrape off sides and bottom of your dish to incorporate it into the sauce. Cook on medium heat for a few minutes to reduce liquid and let sauce thicken a bit. Now, if your kids are not huge fans of the tart taste of lemon, add a teaspoon of sugar to the sauce. Like Marry Poppins said....a spoonful of sugar helps the medicine go down...:) Add capers and parsley, then place your chicken pieces back into the pan to warm through on both sides, about a minute per side.

We love this dish on top of angel hair pasta, but you can serve it with rice or a side salad. As always, I sprinkle a little shaved Parmesan on top as well. Enjoy!
