TERIYAKI SLIDERS WITH MANGO-PINEAPPLE SALSA

Call me a snob but I almost never eat in fast food restaurants, especially not a burger. Once in a while though I do crave a juicy burger but it has to be a gourmet one. I also find burgers extremely filling and just too much with all the extra sides, usually those "dreadful" fries which of course I can never resist. So, no wonder I love the idea of sliders, one or two of those tasty miniatures would satisfy my mind and stomach, and they can also be easily shared with your dinner companion. Tonight, I decided to make special sliders with some Asian flare.

Ingredients for 8 sliders:

  • 1.5 to 2 pounds of lean ground beef
  • 1/4 cup of chopped green onions
  • 1 tsp of ginger (fresh or dried)
  • 2 cloves of garlic, minced
  • 1 tsp of red chili flakes
  • 1 tsp of salt
  • 2 tablespoons of soy sauce
  • 1-2 tablespoons of extra virgin olive oil

Mango-Pineapple salsa:

  • 1 cup of pineapples, diced
  • 1 cup of mango, diced
  • 1 avocado, chopped
  • 1/2 cup of red pepper, diced
  • 1/4 cup of red onions, diced
  • 1 tbsp of chopped fresh cilantro
  • juice of a lime
  • 1 tbsp of honey
  • salt to season

First let's prepare the mango-pineapple salsa. Mix all the ingredients together in a bowl, cover and refrigerate until ready to use.

In a large bowl, mix ground beef with garlic, ginger, green onions, chili flakes, soy sauce. Season with salt. Add extra virgin olive oil, mix well. Divide meat mixture into equal portions and form 8 patties. Now, you can barbecue the patties on your outside grill, or cook them on your stove as I did tonight. Cook it accordingly to your own taste, medium rare, or well done as we like it in my house.

Butter both bottom and top of miniature buns and toast them on your hot skillet. Place arugula salad and slider on your toasted bun, top it with a generous serving of the mango-pineapple salsa. Oh my....Enjoy these good looking and tasty little sliders!
