CHOCOLATE CHIP BANANA-STRAWBERRY MUFFINS
As any good mom, I always have fruits at home for my kids to eat for snacks or to take to school. I have learned the hard way that if I purchase a box of strawberries and put them in my fridge, nobody will touch it. But if I clean them and cut them up, they are gone in less than 24 hours. Lazy kids of mine. :) What about those uneaten, gross looking overripe bananas? You might consider tossing them into your trashcan but instead, use them to make these delicious banana muffins your kids will love.
Ingredients for 12 large muffins
- 3-4 ripe bananas
- 1/4 cup of melted butter
- 1 & 1/2 cups of flour
- 1 cup of sugar (feel free to use only 1/2 a cup)
- 1/4 teaspoon of salt
- 1 egg, beaten
- 1 teaspoon of baking soda
- 3-5 sweet strawberries, chopped
- Chocolate chips - as many as you like
Preheat oven to 350 F. Peal and mash your bananas in a large mixing bowl. Add melted butter and egg, mix it together with a fork. Add flour, salt and baking soda, mix it until all dry ingredients are moist. Add chocolate chips and stir. Last, add the chopped strawberries and fold them in gently, no need to over-mix it.
Line muffin pan with paper cups, divide mixture up equally between 12 cups. Bake it for about 25 minutes, insert toothpick to see if muffins are fully baked. If needed, bake it for a few more minutes. Remove from oven, place muffins on a wire rack to cool completely. Trying one muffin when it is still warm, is a must!
(You can also bake this in a bread-loaf. Grease your baking pan with butter and dust it with flour, and increase baking time to 55-60 minutes.)
