PARMESAN CRUSTED SPICY CHICKEN BITES

We love fried chicken, wiener schnitzel, or anything breaded and deep fried. Making these spicy chicken bites is super easy and tastes amazing added to a healthy salad, makes wonderful sandwiches or bite size appetizers for a party. Trust me if I say that dinner does not get any easier than this, so let’s get started.

Ingredients:

  • 1 chicken breast cut into bite size pieces

  • cup of flour

  • cup of plain breadcrumbs or gluten free breadcrumbs

  • 1/2 cup of Grated Parmesan cheese or vegan cheese

  • 1 egg beaten

  • 1/2 to 1 tsp of chili powder

  • salt & pepper to taste

  • 100 % Corn oil for frying or coconut oil

First, cut your chicken into small bite sized pieces - I cut mine lengthwise, just like when I would chop them for making fajitas. Using 3 separate bowls, add flour into one and add some of your chili powder and mix it well. Use as much as you like, not everyone likes it too spicy, so adjust amount accordingly. Beat egg in second bowl and season it with salt and pepper. Mix grated Parmesan cheese and breadcrumbs in a third bowl and season it with chili powder as well. Next, season chicken pieces with salt, then coat them first in flour, then dip them into the egg, and last coat them with Parmesan, chili breadcrumbs. Fry it in oil, make sure oil is medium hot but not burning, keep heat on medium high. As chicken pieces are small, they will cook fairly fast, 3-5 minutes each. Keep turning it with slotted spoon and remove it from oil with spoon when it reaches a beautiful and deep golden color, drain it on paper towel. Now, all you have to do is decide what you want to serve it with. Salads are great options, just like sandwiches as well. Enjoy!
