CHOCOLATE CHIP LOADED BANANA MUFFINS

Fancy something sweet? Before fruit-flies attack your disgustingly overripe bananas, whip them into irresistible chocolaty desserts instead! Here is our classic recipe for chocolate banana muffins to satisfy your sweet cravings and delight your kids!

Ingredients for 12 large or 9 extra large muffins

  • 3-4 ripe bananas

  • 1/4 cup of melted butter

  • 1 & 1/2 cups of flour

  • 1 cup of sugar (feel free to use only 1/2 a cup)

  • 1/4 teaspoon of salt

  • 1 egg, beaten

  • 1 teaspoon of baking soda

  • Chocolate chips - as many as you like

Preheat oven to 350 F. Peal and mash your bananas in a large mixing bowl. Add melted butter and egg, mix it together with a fork. Add flour, salt and baking soda, mix it until all dry ingredients are moist. Add chocolate chips and stir gently.

Line muffin pan with paper cups, divide mixture up equally between 9 or 12 cups. Bake it for about 25 minutes, insert toothpick to see if muffins are fully baked. If needed, bake it for a few more minutes. Remove from oven, place muffins on a wire rack to cool completely. If you cannot resist like myself, go ahead and eat one while it is still warm. Cannot imagine anything better then biting into a muffin with perfectly melting, sweet chocolate chips! Give into your guilty pleasures, enjoy!

Note: You can opt for baking batter in loaf pan, it will take about 55-60 minutes, but as always check with toothpick and adjust baking time accordingly.
