WATERMELON, FETA & ARUGULA SALAD

The unusually hot San Diego July with its scorching temperatures steered me away from the hot stove and made me wonder about lighter dinner options. I came across this salad at a party, my very own tennis partner prepared it for us. Lisa is an amazing cook and baker, and not the least, a great friend and tennis partner of mine. Her contribution to our feast was a watermelon salad with feta and arugula and I absolutely loved the fresh yet light taste of her creation. Not sure of what dressing she used, as always probably something home-made from her kitchen. I decided to reach for my new obsession of balsamic vinaigrette glaze from Trader Joe's.

This salad is truly everything you crave on a hot summer night. Sweet and salty, juicy and peppery and delights both your sense of taste & sight with its beautiful colors! 

Ingredients for a single serving:

  • 1 cup of watermelon, chopped
  • 1 cup of arugula salad
  • 2 oz of Feta cheese, cubed or crumbled
  • Half a cup of colorful cherry tomatoes, halved
  • Balsamic vinaigrette glaze
  • Pepper to taste

Using a salad bowl, mix arugula, watermelon, feta and tomatoes. Sprinkle with glaze and mix it gently. Serve alone, with toast, or your favorite roasted or barbecued meat. Give it a try, add your own twist to it by using spinach instead of arugula, throw in some chopped purple onions or blueberries for extra color and taste. Lace it with your own dressing while you pour yourself a nice glass of chilled Rose wine to complement this gorgeous plate! Bon Apetite!
