APRICOT LINZER COOKIES

You can't get enough of these lovely looking, sweet tasting cookies. They are soft and crumbly with a fragrant, lemony smell that will fill your house for days! Perfect way to get you into the holiday spirit and it is also a good opportunity to get your kids involved with a fun baking project. Let's get started!

Ingredients:

  • 38 dkg/0.84 lb/about 2 cups of flour
  • 1 cup and 1 tbsp of unsalted butter 
  • 1 cup of powdered sugar
  • 1 package of vanilla sugar 
  • 3 egg yolks
  • zest of one lemon
  • pinch of salt
  • apricot or strawberry or raspberry jam
  • powdered sugar for dusting

Preheat oven to 375 F. Bring butter to room temperature in a mixing bowl, add flour and mix it well with a pastry cutter until crumbly. Add a pinch of salt, powdered sugar, vanilla sugar, eggs, and lemon zest. Quickly kneed ingredients together with your hands, forming it into a ball. Cover it with plastic wrap and refrigerate it for about half an hour. 

Dust wooden board with flour and roll out your dough until it is about 1/8 inch thick. Using your favorite shape of pastry forms, cut out an equal amount of top and bottom pieces. Place them on a baking sheet covered with parchment paper. (use all the scrap dough, form new ball, roll it again, repeat until you use up all the dough) Bake for about 10 minutes or until lightly browned. 

Cool cookies, then separate them by tops and bottoms. Generously dust only tops with powdered sugar. 

Time to assemble your cookies. Take a bottom part and place a small amount of jam in the middle of the cookie. Place top piece over and gently push it down a little for the jam to come out in the middle cutout and "glue" the rest of the cookie together.
