VARIATIONS FOR SWEET CREPES

Crepes, or as we would call it in Hungarian, "Palacsinta", was an every day staple of our kitchen. A huge crowd pleaser, hard for the cook to make it fast enough to satisfy the kids standing anxiously by the kitchen. We mostly stuffed them with sweet fillings, making it our second course after a light soup for lunch. Of course, there are plenty of options for savory salty fillings, I promise I will let you in on the secrets in a future recipe post. But now, let's indulge in some delicious, sweet crepes.

Ingredients:

  • 1 cup of flour
  • 2 eggs
  • 1 cup of milk
  • 1/2 cup of sparkling water
  • 1 bag of vanilla sugar (you can substitute it with a tablespoon of sugar and a teaspoon of vanilla extract
  • a pinch of salt (1/4 teaspoon)
  • 1/2 tablespoon of vegetable oil

In a large bowl mix all the dry ingredients together. Add eggs and mix it on low speed with electric mixer. Start adding milk slowly and increase mixer speed to medium high. Make sure your mix is smooth, add oil and sparkling water. Set aside, or you can store it in refrigerator (up to 24 hours) until you are ready to start baking your crepes. While your crepe mix is "resting", prepare you favorite fillings. Wash and cut up the fruits of your choice. If you are using ricotta, mix 1/2 a cup of ricotta cheese with 1-2 tablespoons of sugar and teaspoon of lemon zest. Get the big jar of Nutella out of your pantry, apricot jam, vanilla pudding, whipped cream and powder sugar for dusting and decorating.

Ready to fry your crepes? OK, usually the first couple of crepes are your practice pieces, so do not get discouraged. Heat a non-stick crepe pan on medium-high, drizzle pan with vegetable oil. When the pan is hot, take a ladle full of crepe mix, about 1/4 of a cup and pour it into the pan while tilting it in a circular motion quickly so mixture covers the entire pan. Place it back on stove and cook for a minute or two. Loosen sides with a spatula and flip your crepe over. Cook it for another minute or two, then place it on a warm plate. Batter makes about 10-12 crepes.

All is left to do is to add your favorite fillings, roll it or fold it, decorate it with fruits and powdered sugar. Yumm!!! #mommyknowsbest
