GRILLED SANDWICH WITH CHICKEN SALAD & ARUGULA

When it is only Thursday but you already ran out of dinner ideas for the week... When even the thought of entering your own kitchen makes you cringe yet your kids already texted you from school before 9 am asking what you are making tonight... Trust me, we all have those days, even me who enjoys cooking a great deal but sometimes I just want an easy meal. Here is a simple but delicious solution to your problem, an eye pleasing, satisfying dinner option for the whole family without intense labor & sweat in your kitchen! 

Ingredients:

  • 2 cans of chicken breast in water
  • 1 red California pepper, chopped
  • 4-6 green onions, chopped
  • 2 large dill pickles chopped
  • salt & pepper to taste
  • 1-2 tbsp of mayonnaise 
  • 1-2 tbsp of sour cream  (I used lactose free)
  • 1-2 tbsp of Dijon mustard
  • sliced bread of your choice - I used my favorite crusty Russian bread 
  • slices of Cheddar cheese (used lactose free cheese)
  • arugula salad 

Drain chicken and pour it into a mixing bowl. Break it up with a fork then add chopped red peppers, onions, pickles, salt and pepper to taste. In a small bowl, mix up sour cream, Dijon mustard and mayonnaise using the same portions of each ingredient.

Add dressing to chicken and gently fold it around to moisten your ingredients without breaking it up too much. I suggest adding less dressing to your chicken, you can always add more later if you feel it is too dry. 

Spread a nice amount of chicken salad on one of the breads, top it with arugula then with the sliced Cheddar cheese. Place another piece of bread on top. Butter both top and bottom and place it into hot grill pan.

Toast both sides until nicely brown and crispy. Cut it in half and serve it with fruits or chips on the side. Wasn't this easy? Enjoy! #mommyknowsbest
